4 ripe but firm bananas, peeled and cut into thin slices
4 beaten eggs
4 tablespoons of sugar
4 cups of milk
1 teaspoon of vanilla
1/2 teaspoon of cinnamon

Butter the bread slices
Place thin banana slices on 4 of the bread slices
Cover with remaining bread slices, making sandwiches
Cut each sandwich into four parts
Arrange in a greased baking dish
Beat eggs with sugar and milk
Add vanilla
Pour over bread
Sprinkle with cinnamon
Bake at 170°F for about 40 minutes or until pudding is firm
Serve 4 portions.
