Beat the egg whites with 1/4 cup granulated sugar, until firm peaks form. Reserve
Beat the yolks, until thickened, with 1/2 cup granulated sugar and a pinch of salt
Combine the grated zest and lemon juice
Cook in a water bath, stirring until thickened
Add the egg whites, whisking until no streaks remain
Place in a refractory mold and bake only to lightly brown
Serve chilled.
