Strain the mixture into a bowl and discard the solids
Reserve the liquid
Cook the apple in the microwave on high for 2 minutes
Pulse the cooked apple, bread, sugar, and almonds in a processor until coarsely chopped
Transfer the mixture to a bowl and stir in the egg whites, grated lemon peel, and butter
Mix well and divide among the prepared ramekins
Microrowave on high for 3 minutes or until firm
Reduce the heat to medium-high and microwave for an additional 4 minutes or until set
Let cool and refrigerate before serving
Prepare the cream by whisking together the egg yolks, cornstarch, milk, vanilla extract, and heavy cream
Microwave on high for 3 minutes or until warm
In the last minute of cooking, stir in the heavy cream to prevent scorching
Unmold the puddings and remove the parchment paper
Dust with chocolate shavings and serve with whipped cream and candied cherries
