Divide the mixture into four 1/2 cup ramekins and place them in a larger microwave-safe dish
Add boiling water to the ramekins and cover with a microwave-safe lid
Cook on high for 6 to 7 minutes or until the edges are set
Let it stand for 15 minutes before unmolding

For mint flavor, omit vanilla extract and add 6 tablespoons of peppermint liqueur
