Mix the eggs well with the ricotta cheese
Add the milk, salt, lemon zest, and melted butter
Mix until a ball forms
Knead the flour at room temperature to obtain a dough ball
Cover with a clean and dry cloth and let it rest for one hour

Roll out the dough on a smooth surface, dusting with flour, to achieve a thickness of 2 mm
With the grater, cut the dough into rectangular shapes of 10 x 7 cm, making a small incision in the center of each one

Fry the dough pieces at a time in hot oil, turning them occasionally until they are golden brown
Drain on paper towels
Arrange on a serving plate, dust with ricotta cheese, and serve.
