1 lemon (juice and zest)
3 cups of peeled and finely chopped cornmeal
1/4 cup of water

Melt the butter and mix with the pea crumbs
Combine the grated coconut with the cinnamon and lemon zest
Place a third part of the pea crumbs at the bottom of a greased form
Cover with half of the cornmeal
Sprinkle with half of the grated coconut and cinnamon
Add another part of the pea crumbs
Top with the remaining cornmeal
Sprinkle with grated coconut and cinnamon
Soak with water and lemon juice
Cover with the remaining pea crumbs
Tightly cover or wrap in aluminum foil, and bake at a moderate oven temperature for 40 minutes
Remove the lid and let it brown
Serve warm
