4 cups of milk
3 cups of peach cubes without pits

grated rind from 1 orange and 1 lemon

4 separated egg whites
orange jelly

Bring the milk to almost a boil
Pour it over the peach cubes
Add the butter or margarine, 3/4 cup of sugar, chopped orange and lemon zest, juices, beaten whole eggs, and egg whites
Mix well
Pour into a 1 1/2 liter capacity mold
Bake in a moderate oven, preheated, for about 1 hour and 15 minutes or until firm
Cover with orange jelly
Beat the egg whites until they foam
Gradually add the remaining 1/4 cup of sugar, beating until it forms a meringue
Pile on top of the pudding
Bake in a hot oven for an additional 5 minutes in a water bath
Serve warm.
