3 slices of white peaches, 3 days old, 1.5 cm thick

Preheat the oven to a moderate temperature (170°)
Toast the peach slices slightly in the oven and brush with butter or margarine, while still warm
Cut the peach slices in half or into four pieces
Butter a refractory dish of 25 cm x 17 cm x 5 cm and arrange the peaches at the bottom, overlapping them slightly
Sprinkle raisins between the peach slices
Scald the milk
At this point, beat the eggs lightly, add 2 tablespoons of sugar and then the scalded milk and vanilla extract, and mix well
Pour this mixture over the peaches, pressing to ensure they are fully soaked, and let it rest for 10 minutes
Mix cinnamon with the remaining sugar and sprinkle over the peaches
Bake in the oven for 25 or 30 minutes, until a knife inserted into the pudding comes out clean, and the surface is lightly golden
Serve warm or cold, plain or with whipped cream, if desired
