Make a weak coffee-like syrup with the sugar and one cup of water
Let it cool
Add the butter
Beat the eggs lightly, then combine with the syrup
Add the grated lemon zest, cheese, and flour
Mix everything well and pour into a pudding mold coated with caramel syrup, made by boiling three tablespoons of sugar in a saucepan until caramelized
Add 3/4 cup of water and cook until slightly thickened
Pour into the pudding mold and top with the cream
Bake in a water bath
Drink: mint liqueur.
