Bring the milk to a boil in a saucepan, then slowly add the semolina, stirring constantly
Add a pinch of salt and stir energetically to prevent lumps forming at the bottom
Five minutes later, remove from heat
The semolina should be smooth and compact by this stage
Add the softened butter, sugar, and eggs, stirring well with a wooden spoon
Finally, add the egg whites and mix until fully incorporated
Grease the center of a 20cm-diameter cake pan with butter, then dust with flour
Pour in the semolina mixture and smooth the surface with a knife
Place in a moderate oven for about 30 minutes, or until the pudding is cooked and golden brown
Remove from the oven, sprinkle with sugar, and let cool
Open the can of pears and cherries, cut them into chunks, and place in a bowl
Drizzle the rum over the fruit, mix well, and pour into the center of the pudding
Simmer the fruit juices together, then serve in portions
