1 cup of uncooked rice
2 cups of milk
2 eggs, beaten
1/2 cup of sugar
1 teaspoon of vanilla extract
1/4 teaspoon of nutmeg

Cook the rice in water for about 20 minutes or until it is tender
Drain well and reserve
Mix all the ingredients, except the rice, and pour into a refrigerated form
Spread the rice evenly on top
Place the mold in a hot oven at a moderate temperature (170°F) for 1 hour or until, when inserting a knife into the pudding, it does not come out white like milk
If desired, garnish with raisins before serving
Or else, if preferred, sprinkle with a little sugar and cinnamon.
