In a medium saucepan, combine the milk, lime shell, and cinnamon stick
Bring to a boil and let simmer for 15 minutes
While this is cooking, prepare the caramel: Mix the sugar with the water
Bring to a boil and cook until golden brown, stirring occasionally
Remove from heat and pour into an English-style cake mold (22.5 x 10 x 6 cm), lining the bottom and sides with the milk mixture
Remove the lime shell and cinnamon stick from the milk
Beat the eggs and egg yolks lightly with the sugar
Add the still-warm milk to the mixture
Strain through a fine-mesh sieve into a clean bowl
Pour into the prepared mold
Bake in a moderate oven (170°C) or until a toothpick inserted into the center comes out clean, about 40-50 minutes
Remove from the oven and let cool
Chill in the refrigerator for at least 2 hours
To unmold, run a knife around the sides
Serve 6 to 8 people
