Plum Sauce
3/4 cup ricotta
1 1/2 cups water
12 dried plums

2 cups ricotta
1/2 cup cornstarch
1/2 cup heavy cream
1 tablespoon lemon juice
For decoration
9 dried plums without pits

4 small molds (7 cm in diameter). Greaseproof paper

Plum Sauce
In a small saucepan, mix well the plums, cornstarch, and water
Cook over medium heat, stirring occasionally, until the sauce thickens slightly (about 15 minutes)
Remove from heat and let cool
Moisten the molds with water
Line the bottom of each mold with a circle of greaseproof paper
Massa
Combine all ingredients in a processor until smooth
Distribute evenly among prepared molds, pressing down gently with your fingers
Unmold immediately by running a knife around the puddings
Discard the greaseproof paper
Serve with plum sauce and arrange plums on plates.
