In a large bowl, mix all the ingredients except butter
Cover and let it rest for 1 hour
Grease with butter and sprinkle with sugar a 20 cm diameter mold
Pour the egg yolk mixture into the prepared mold and let it rest for another 2 hours
Preheat the oven to 180°C (medium)
Place the mold in a water bath (bain-marie) and bake until golden brown and clean when a toothpick is inserted (approximately 1 hour and 30 minutes)
Let it cool, demold, and refrigerate
