Cut the pineapple into 1cm thick slices
Mix the whole milk and heavy cream in a shallow dish
Melt butter in a non-stick skillet
Soak the pineapple slices in the milk mixture, just until they're moistened, then dip them in beaten eggs and fry in the melted butter until golden brown on both sides
Arrange the fried bread pudding in a serving dish and dust with sugar and cinnamon to taste
Serves 6.
