Peel the potatoes and cook them in seasoned salted water
When they're cooked, pass them through a ricer
Put them back in the pot, season with salt and black pepper
Melt the butter into the potatoes, using a metal whisk
Add the warmed heavy cream and, if it's not creamy enough, add more
If needed, keep the pot over low heat to prevent cooling, until serving time
Serves 4 to 6.
