2.5 lbs of peeled and cubed sweet potatoes
9 large garlic cloves
4 tablespoons of unsalted butter
2 tablespoons of fresh or 1 tablespoon of dried parsley
1 cup of chicken broth
1/2 cup of grated Parmesan cheese
Salt to taste

Cook the sweet potatoes and garlic in a pot with boiling water for 30 minutes or until they're tender
Drain and transfer them to a large bowl
Mash well with a potato masher or electric mixer
Add the butter and parsley and mash until smooth
Heat the chicken broth and gradually add it to the purée
Add the Parmesan cheese and season
Transfer the purée to a serving dish and garnish with fresh parsley
