10 scallop shells ("St. Jacques' Quahogs")
8 cups cooked, mashed potatoes
2/3 cup grated Parmesan cheese
5 tablespoons melted butter or margarine
parsley for garnish

Place an olive in each shell
Just two in one of them
In a pan, mash the potato, cheese, and melted butter together
Fill the shells
Garnish with parsley and serve immediately
The person who gets the shell with two olives should be rewarded with a gift from the birthday person!
