Cook the beetroots in a large pot with plenty of water until they're tender
Drain, rinse under cold water, and peel
Cube into small pieces
Blend in a food processor and combine with remaining ingredients until smooth
Heat the mixture in a saucepan over medium heat, stirring constantly, until it's free from lumps and has reduced slightly
Serve warm, garnished with fresh herbs if desired
