2 tablespoons of butter or margarine
1 small onion, finely chopped
2 cups of uncooked rice
1/2 cup of raisins
3 cups of chicken broth
1/4 cup of toasted and peeled pecans

Melt the butter over medium heat
Add the onion and cook until softened for about 2 minutes
Add the rice and stir well
Add the raisins
Add the chicken broth and let it come to a boil
Cover the pan
Reduce heat and simmer, allowing all liquid to be absorbed, about 15 minutes
Remove from heat and add the pecans
Serve with meats, roasted birds or stews
Serves 8 portions.
