1 large sweet potato
1/4 cup water
1 tablespoon sugar
1 large sweet potato

Peel the sweet potatoes, remove the seeds and cut them into four pieces
Place them in a pot together with water
Cook over low heat until they soften and come apart easily
Drain the liquid
Blend the sweet potatoes in a blender together with sugar
Put it in a bowl and refrigerate
Serve as a side dish with stuffed quail
