In a large pot, over low heat, warm 1 cup of olive oil, add the sweet potatoes, and stir
Cover the pot and cook for about 5 minutes, or until the sweet potatoes are very tender
Add the pork and mix until it is well combined
Remove the mixture from the pot and process with salt and the remaining olive oil
Heat again over low heat, stirring, until warm
Serve hot with salted crackers
