In a large saucepan, over low heat, warm 1 cup of olive oil, add the sweet potatoes and stir
Tentatively cover the saucepan and cook for about 5 minutes or until the sweet potatoes are well mashed
Add the bread and stir until it's well combined
Remove the mixture from the saucepan and process with salt and the remaining olive oil
Warm over low heat, stirring, until heated through
