2 tablespoons freshly squeezed lime juice
5 large egg yolks, separated

3/4 cup all-purpose flour
1 tablespoon unsweetened cocoa powder
3/4 cup chopped walnuts or pecans
1/2 cup whipped cream

Preheat the oven to moderate temperature (170°F)
Beat the butter with 1/2 cup sugar and 2 tablespoons lime juice until creamy
Add the egg yolks, orange zest, flour, and cocoa powder; mix well
Pour the batter into a 9x13-inch baking dish and bake for 10 minutes
Beat the egg whites in a separate bowl until stiff peaks form with the remaining lime juice and gradually add the remaining sugar without stopping
When the egg mixture is firm, add the chocolate and nuts
Remove the baking dish from the oven and let it cool for 10 minutes
Dollop the whipped cream over the partially baked batter and top with the egg mixture (if using damson gelatin, add 2 tablespoons freshly squeezed lime juice)
Bake again at moderate temperature for 30 minutes
Let it cool and cut into squares.
