4 flavorless gelatin envelopes
1 cup of cold water
4 cups of granulated sugar
1 cup of hot water
1 cup of orange juice
5 tablespoons of lemon juice
zest of 1 orange
zest of 1 lemon
a few drops of yellow or red food coloring

Soak the gelatin in cold water
Mix the sugar and hot water in a saucepan
Bring to a simmer and let cook for 20 minutes
Add the dissolved gelatin
Let it cool and set for about 5 minutes
Pour into a glass or small baking dish
Let it chill in a cool place until firm
Turn out onto a surface dusted with confectioner's sugar
Cut into squares and coat with crystal sugar
