Grease the sides of a 2-liter saucepan
Combine the sugar, milk, and salt in the saucepan
Bring to a medium heat, stirring constantly, until the sugar dissolves and the mixture begins to boil
Simmer without stirring until the mixture reaches a soft-ball stage (test by dropping a small amount of the mixture into cold water - it should form a soft ball)
Remove from heat immediately
Allow the mixture to cool to room temperature, without stirring
Add the butter and vanilla; stir only until melted
Beat vigorously until the mixture holds its shape when lifted with a spoon
Add the marshmallow topping and beat until well combined and slightly stiffened
Fold in the chopped cherries; mix quickly and spread into a greased baking dish
Mark off squares while still warm
Cut when firm.
