1/2 cup of olive oil
1/2 cup of white wine vinegar
3 tablespoons of chopped fresh parsley
3 tablespoons of chopped green onion
3 cloves of minced garlic
1 tablespoon of grated ginger
1 tablespoon of crushed thyme
1/2 teaspoon of salt
1/2 teaspoon of black pepper
240g of cheddar cheese
240g of Minas cheese
1/2 cup of olive oil

240g of Minas cheese
In a large bowl with a lid, combine all the ingredients except the cheeses
Close and shake the bowl well to mix everything
Refrigerate for later use
Cut the cheeses into rectangular slices approximately 3cm x 5cm, with a thickness of 1cm
Arrange them in rows on a refrigerator shelf, alternating cheddar and Minas cheese slices
Pour the reserved marinade over the top, cover with plastic wrap and refrigerate for at least 8 hours
Serve chilled.
