Soak the cornmeal and let it sit for an hour
Drain and squeeze out the excess liquid with a cloth
Combine the remaining ingredients and mix until well blended
Using a spoon, take a small portion of the mixture and shape into fritters
Heat oil in a frying pan and fry the fritters slowly until golden brown
Drain on paper towels
Serve with lemon wedges.
