1 pie crust
1 lightly beaten egg white
Filling:
4 slices of smoked bacon
2 cups of grated Cheddar cheese (or substitute)
4 eggs
1 cup of milk
2 cups of sweet potato, cut into 1/2 cm thick rounds
1 cup of finely chopped onion
1 medium-sized green pepper, chopped not too fine
salt and black pepper to taste

Prepare the pie crust: Line the bottom and sides of a 25 cm diameter round form
Brush with egg white
Refrigerate
Prepare the sweet potatoes
In a medium-sized skillet, place the sweet potatoes, onion, green pepper, salt, and black pepper to taste
Add 2 cups of boiling water
Cook for 5 minutes or until the sweet potato is partially cooked
Drain well
Sprinkle 1 cup of grated cheese at the bottom of the pie crust
Arrange the sweet potato mixture on top
Sprinkle with grated cheese and crispy bacon, chopped
Beat the eggs lightly with milk and pour over the top
Bake in a moderate oven preheated to 170°C for approximately 1 hour and 15 minutes or until it's risen and golden brown
Remove from the oven and let rest for 10 minutes before serving
Serves 6 people
If desired, garnish with parsley.
