For the crust
2 cups all-purpose flour (240 g)
150 g cold butter, cut into small pieces
1/4 cup ice-cold water (60 ml)
1 pinch of salt
For the filling
1 cup broccoli florets (100 g)
1 cup cauliflower florets (100 g)
1 cup frozen peas (125 g)
2 tablespoons butter
1/4 cup all-purpose flour (30 g)
2 cups milk (480 ml)
4 large eggs, lightly beaten
1/2 teaspoon salt
For the crust
2 cups all-purpose flour (240 g)

Preheat the oven to 350°F (medium)
Mix the crust ingredients: in a bowl, combine the flour and butter with a fork until it forms a crumbly mixture
Add the cold water and salt, and mix until a smooth dough forms
Roll out the dough on a floured surface, using a rolling pin, to form a disk about 29 cm (11 inches) in diameter
Place the dough into an ungreased tart pan with a removable bottom
Make a few holes with a fork and bake in the preheated oven until the crust is lightly golden brown (about 20 minutes)
Remove from the oven and let it cool (keep the oven on)
Mix the filling ingredients: in one pot, bring 3 cups of water to a boil
Add the broccoli and cauliflower, and cook until tender (about 10 minutes)
Remove from heat, drain, and set aside
In another pot, bring 1 cup of water to a boil
Add the peas and remove from heat
Let it sit in the hot water for about 3 minutes, or until tender
Drain and set aside
Melt the butter: in a medium pan, melt the butter over high heat
Add the flour and whisk constantly until golden brown
Gradually add the milk, whisking continuously until thickened
Remove from heat, stir in the eggs, salt, and any remaining filling ingredients
Transfer the mixture to the cooled crust and distribute the broccoli, cauliflower, and peas
Bake in the preheated oven until the filling is set and lightly golden brown (about 20 minutes)
Remove from the oven and serve
