1/4 cup finely chopped onion
2 tablespoons butter or margarine
4 tablespoons all-purpose flour
4 cups milk
1 cup Minedura Semi-Cured Cheese, grated coarsely
1 cup cooked peas
1/4 cup finely chopped red bell pepper
salt and black pepper to taste

Sauté the onion in butter (or margarine) over low heat until translucent but not golden
Add the all-purpose flour and gradually add 2 cups of milk, stirring constantly until thickened
Cook, stirring continuously, until the mixture has thickened
Add the remaining milk and stir well
Add the cheese and stir until melted
Add the peas and red bell pepper and season to taste with salt and black pepper
Serves 4
