For the crust

1/4 cup ice-cold water (60 ml)
1/2 teaspoon salt

For the filling
3 eggs
1/2 cup heavy cream (120 ml)
1/2 cup grated Parmesan cheese (50 g)
1/2 cup grated Minas cheese (50 g)
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
For the crust

Preheat the oven to 350°F (medium)
Make the crust: In a bowl, mix together flour and butter with a fork until it forms a crumbly mixture
Add the ice-cold water and salt, mixing until a smooth dough forms
On a lightly floured surface, roll out the dough to fit a removable 9-inch (23 cm) tart pan with a removable bottom
Make small holes with a fork and bake in the preheated oven for about 20 minutes, or until the crust is lightly golden
Remove from the oven and let cool, keeping the oven on
Make the filling: Mix together all ingredients and place over the crust
Bake in the preheated oven for about 15 minutes, or until the filling is set and lightly browned
Serve immediately
