4 cups of fresh grated coconut (520g)

Grease a 20cm diameter form with butter and dust with cocoa powder. Reserve
In a large bowl, combine the egg white, cocoa powder, and coconut
Mix well
Cover with plastic wrap and let rest for about an hour
Transfer the reserved mixture to the prepared form, cover, and let rest for about 2 hours
Preheat the oven to 180°C (medium)
Place the form in a baking dish
Flood the baking dish with hot water until it reaches 2/3 of the form's height
Bake in the preheated oven until, when inserting a toothpick into the quindim, it comes out dry (about 1 hour and 20 minutes)
Let cool
Dismount the quindim onto a plate, cover with aluminum foil, and let rest in the refrigerator for about 2 hours
Serve immediately
