1/3 cup natural yogurt
2 tablespoons freshly squeezed lime juice
2 teaspoons curry powder
1 teaspoon grated ginger
4 tablespoons olive oil
Salt and pepper to taste

2 cups diced mango
1 red bell pepper, seeded and cubed
1/4 cup chopped fresh cilantro

In a bowl, mix the yogurt with lime juice, curry powder, and grated ginger
Add the olive oil and whisk well until smooth
Season with salt and pepper

Cook the quinoa in four cups of water with 1 tablespoon of salt for 10 minutes or until slightly tender
Drain and rinse under cold running water

In a large bowl, mix the cooked quinoa with all the remaining ingredients until well combined
Add the yogurt sauce and mix
Season with salt
Serve.
