With the help of a wire whisk, mix the oil and egg yolks together, making a mayonnaise
Add the mustard, chives, lemon juice, salt, and pepper
Mix well and reserve
Cut the cauliflower into thin strips, season with the reserved sauce, add crumbled cheese, nuts, and serve alongside a green salad
