1/2 cup of mayonnaise
1/2 cup of fresh thyme or chives for garnish
Agria stalks for garnishing

Pickle the agria, onion, and thyme (or chives)
Mix with ricotta and mayonnaise
Combine all ingredients in a blender and blend well
Spread the filling on the pancakes
Roll them up and refrigerate until serving time
When serving, cut each rolled pancake into 4 diagonal pieces and garnish with chopped thyme (or chives)
Garnish with agria stalks
Instead of rolling the pancakes, you can stack them one on top of another
To serve, cut as if it were a cake
