Rinse the crabs and remove the innards
Reserve the shells and heads
Cut the fish into similar-sized pieces to the crab
Beat the butter
Cook the onion in 20 g of butter and a little water, covered pan
Fry the crabs quickly in olive oil (just until golden)
Set aside and leave the olive oil in the skillet
Simmer the shells and heads in the remaining olive oil, add the beaten butter and cook without pressing down
Season the crab and fish pieces with salt and pepper
Cook in the cooking liquid of the sautéed onion
Add the cooked onion and melted butter
Serve arranging with sautéed onion on top and a bit of sauce.
