Let it sit for about 2 hours
In a large pot, combine the tomato, hot water, and a pinch of salt
Bring to a boil, then reduce heat and let simmer for 10 minutes
Transfer the mixture to a blender and blend until smooth
Set aside
In another pan, heat the olive oil, butter, bacon, and paprika over medium-high heat
Add the chicken pieces and cook until golden brown, turning occasionally
Add the blended tomato mixture to the pan and bring to a simmer
Stir in the cooked rice and hot water
Cook until the liquid has been absorbed and the rice is tender
Finally, add your choice of chopped fresh herbs, such as parsley or cilantro.
