3 cups of water
1 1/2 to 2 cups of grated carrot - 270 to 360 g
1 tablespoon of orange zest, grated
2 cups of orange juice - 480 ml
4 tablespoons of lemon juice - 60 ml

Mix the water and carrot in a saucepan
Bring to a boil, then reduce heat and simmer for about 6 minutes
Remove from heat and let cool
While that cools, grate the orange zest, squeeze the orange juice, and add it to the carrot mixture, along with lemon juice
Pour into a small baking dish and place in the freezer until partially frozen, which will take about 5 hours
It can be served as is or blended until creamy and returned to the freezer again until almost solid
Serve in individual cups
Yields 12 servings.
