Clean the broccoli, using the florets, leaves, and stems
Cook, drain, and squeeze out excess moisture
In a pan, melt the butter, add the scallion, and cook for 2 minutes
Add the broccoli and cook, stirring frequently, until all excess moisture has evaporated
Turn off heat, add ricotta cheese, eggs, Parmesan cheese, and breadcrumbs
Season with salt and black pepper to taste.
