Beat the eggs thoroughly with the milk
Mix in the baking powder, Parmesan cheese, and parsley
Set aside
In a non-stick skillet, melt the butter over medium heat
Quickly sauté the onion and zucchini
Season with salt and black pepper
Cover with the sliced mozzarella cheese, then add the egg mixture
Fry for 7 minutes at low heat, covering the skillet
Flip the fritter carefully using a plate, and let it cook for an additional 3 minutes at low heat
