Grind the meat, salami, and garlic using a food processor
Place in a bowl
Season with salt and black pepper
Mix well with a wooden spoon
Prepare the dough, open it, and fill according to our designs
Let it dry for 40 minutes
Cook the dough in boiling water over low heat until it rises to the surface
Remove from the water with a skimmer and drain on absorbent paper
Serve with your preferred sauce (see recipes below)
This filling is enough for 4 portions
Note: Do not let the water boil vigorously, as it may cause the dough to break apart before it's fully cooked
Almost always, the filled dough is cooked when it rises to the surface of the water, but it may not be fully cooked; therefore, test frequently and put it back in the pot if it's not yet cooked.
