1 cup of shredded coconut, chopped

Melt the butter or margarine, do not let it brown and sauté the onion
Add the coconut and egg yolks, over low heat
Add the flour and milk gradually, stirring constantly until thickened
Remove from heat and season with salt and black pepper
Add the parsley.
