Squeeze the oranges and lemons and reserve the juice
Cook the grated rinds in 3 cups of water for about 30 minutes, until they become soft
Add the grated carrots and 3 cups of water and cook for approximately 20 minutes, until the carrot becomes soft
Add the orange and lemon juices
Mix this mixture well
For each cup of the same, you should add 2/3 cup of a pinch
Let it simmer to obtain a gelée point for about 1 hour
Pour still hot into preheated molds
Close and cook in a water bath for 10 minutes.
