Heat the olive oil in a frying pan over high heat
Add the garlic and sauté until golden brown
Add the onion and spinach and cook for 5 minutes or until the spinach is tender
Season with salt

Transfer to a processor and process until smooth
Add the remaining ingredients and process until a paste forms
Serve with arugula salad or toasted bread
