8 artichokes

2 tablespoons of chopped fresh parsley

Remove the outer leaves from the artichokes
Trim the stem ends and remove any tough, fibrous parts from inside the artichokes
Place the prepared artichokes in salted water with flour and lemon juice to prevent discoloration
Drain and arrange on a plate
Combine the onion, salt, lemon juice, olive oil, water, peas and carrots, cumin, and parsley
Cook over medium heat for about 30 minutes or until the artichoke is tender
Serve cold with or without the peas and carrots, in olive oil, and sprinkle with parsley
