Prepare a water bath and bring it to a temperature that's comfortable for you
Turn off the heat and place the chocolate in the bowl
Cover and let it sit for about 3 minutes
Whisk the chocolate until it reaches a smooth consistency
Let it cool down
Beat the cream until it becomes fluffy and mix it with the melted chocolate
Add the liqueur and refrigerate overnight
Sieve the grated chocolate and add it to the mixture above
Prepare to fill 28 truffles of 3.5 cm.
