Sausage filling with various ingredients
4 cups of finely chopped sausage
2 cups of boiling water
1/2 cup of finely chopped onion
1/2 to 3/4 cup of butter, margarine, or oil
16 cups (four containers holding 1,000g each) of biscuit flour
1 1/2 tablespoons of salt
1 tablespoon of black pepper
Filling with Marmalade
Make the sausage filling above; meanwhile, add cooked and chopped turkey marmalade.
Aubergine Filling
Prepare the filling above by substituting the prune juice for the sausage liquid and adding 2 cups of cooked, seedless black aubergines, cut into small cubes.

Cook the sausage slowly in boiling water, covered, for 15 to 20 minutes or until it becomes tender
Drain, but reserve 1 cup of the liquid
Cook the onion in butter over low heat until it is soft and translucent, but not browned
Mix the biscuit flour and seasonings; add the sausage, reserved liquid, butter, onion, and mix well with a spoon
This filling is for large turkeys (5 kg)
If smaller, use half or the amount you deem necessary
