1/4 cup of olive oil

1 kg of zucchini, cut into slices
1 cup of fresh parsley
1 tablespoon of grated lemon zest
Salt to taste

Heat the olive oil in a pan over low heat
Add the onion and garlic and sauté for 10 minutes
Add the zucchinis, increase the heat, stir, and cook until they are tender but still slightly crisp
This should take about 5-7 minutes
Add the parsley and salt, and stir for an additional 5 minutes
Remove from heat, add the lemon zest, and serve
Serve 8 portions.
