700g of sweet potatoes
1 medium onion, finely chopped

Cook the sweet potatoes in water for about 1 hour
Remove from the pot, drain and puree
In a small pan, sauté the onion in olive oil for 3 minutes
Add the scallions, vinegar, cumin, and salt
Stir well
Remove from heat, add the pureed sweet potatoes and stir well
Serve warm with croquettes.
